Autumn in my Northern California garden: Okra— or “Bhindi” in India; Gumbo or Gombo, and Ladyfingers in many parts of the world—is a member of the Mallow family, related to cotton, hibiscus and hollyhocks! I haven’t grown Okra for many years and I had forgotten the beauty of its flowers! . . It is thought that Okra originated in Ethiopia, and was cultivated by the ancient Egyptians by the 12th century B.C., with crops spreading throughout Africa, the Indian Subcontinent, Asia and the Middle East. . . I love the sheer versatility of cooking Okra—of course besides stews like the famous Creole “Gumbo”—my favorite is actually the Indian Curry dish, “Bhindi Masala”, a sautéed vegetable dish with tomatoes, onions, ginger, turmeric, cumin and other spices; I also add Cilantro at the end of cooking. But since my father was a great chef who grew up in a farming family in Arkansas, his favorite vegetable was okra, and he would make the tastiest Southern dish, “Fried Okra Patties” which have also become a beloved dish of mine! . . Okra is renowned for its nutritional qualities, namely: insoluble and soluble fiber, as well as numerous vitamins and minerals.
