Need an easy Monday night meal? ⁠⠀ ⁠⠀ A version of Tuna Nicoise Salad is always easy to pull together.⁠⠀ ⁠⠀ In this version I have used spinach leaves, baby potatoes (steamed in microwave), green beans, tomatoes and boiled egg. The tuna has been mixed with baby capers, lemon juice, lemon zest, salt and pepper.⁠⠀ ⁠⠀ The dressing I make is very simple:⁠⠀ 🍴1/3 cup olive oil⁠⠀ 🍴1/3 cup red wine vinegar⁠⠀ 🍴1 tablespoon dijon mustard⁠⠀ 🍴Salt and pepper to taste⁠⠀ ⁠⠀ Keep left over dressing and use on a salad later in the week, further cutting down prep time 🙂⁠⠀ ⁠⠀ This meal provides a balance of protein, healthy fats, fibre and carbohydrates. Post workout creamy vegan pasta 🥑 . All you need is to do is: 🥑 Cook pasta as per packet instructions 🥑 Pop an avocado, one garlie clove, a squeeze of lemon, salt and pepper and one tablespoon of olive oil in a food processor and whizz it all up 🤪 🥑 Drain the pasta and add the avocado mix to the pan along with a tablespoon of nutritional yeast (or cheese if you're not vegan!) 🥑 Half some cherry tomatoes and pop them in the pan too 🥑 Mix it all up and serve immediately! . The garlic bread I made with a spoonful of vegan butter mixed with half a teaspoon of garlic granules and popped under the grill for 5 mins 😊 . MEAL PREP IDEAS - how I'm currently attempting to feel at least a bit on top of life and like I got my shizz together 😜 . I also love a Sunday routine of easy morning brekkie and coffee, a gym session, market trip for all the best veggies (where I got asked if I was the girl off instagram and told I was strong today 🤩🙋🏼‍♀️🤣) on the way home. Then food prep before the ingredients even get a chance to make it to the fridge. . 🏋️‍♀️->👩‍🌾->👩🏼‍🍳 . Anyhow....the prep and maybe a couple helpful ideas in there somewhere: . I dont make up a bunch of full meals, I prep a couple different protein sources, a healthy carb/starchy veg or 2, then make sure I have some easy either raw or cooked types of veg to make variety EASY AS PIE every day! . This weeks examples - * Salmon fillets (frozen from aldi) roasted with a home made dressing of 2 chopped garlic cloves, 2 tsp wholegrain mustard, and 2 tsp honey, topped with salt/pepper. . *Kale (or cavo nero if ya'll wanna be real specific!) roughly chopped/shredded then rubbed with just some lemon and pink salt. I then either add some balsamic vinegar and/or oil to have raw (as pictured) or it is ready to be added to cooked dishes such as omelettes or just when reheating any leftovers. . *Butternut squash roasted in coconut oil with salt and cinnamon. . *Paprika potatoes, which are simple baking potatoes cubed then roasted again in coconut oil and salt, but also with a few dashes of smoked paprika, turmeric, and pepper. I also crush a few cloves of garlic and throw them in the pan. . *I chopped cucumber and celery sticks which I keep in a tub in water as this keeps them fresh and crunchy for the rest of the week but they are ready to go for snacking (especially useful when you feel the need for that greedy pre dinner eating 😅) or just adding some more veggies to meals - a variety of raw and cooked is great to get in weekly. . *Boiled eggs - the classic easy go to! I've got 3 or 4 days having to leave the house before brekkie so these are perfect to have with the squash and kale or with avo 🥑 . *Extras on hand to meals - beef burgers (10mins to cook), fruit, avocado, olives, sauerkraut.

I’m still craving those long meandering sunny days and raw everything summer salads 🥗 ... Thankfully, I was lucky enough to get both today... 🍃 #timeflies You can make this simple salad in minutes. Just rough chop Cauliflower, and then add tomatoes, cucumbers, onions, peppers, sun dried tomatoes, hemp heart seeds, sunflower seeds, scallions, fennel seed, any fresh herbs, peppers, acv, olive oil, mustard oil, sea salt. *Substitute any of the ingredients with what you have on hand. *Fermented veggies optional.
