This is my third week tracking food. Really trying to focus more on Protein this week. Calorie difference between day 4 and day 6 isnt much different however Protein substantially increased by 20+grams. I substituted 1/2 cup of flour in banana bread for Protein power( banana bread taste great!). Studied and brunched at Algebra Tea House for the first time in too long! This place used to be one of my favorite spots to get homework done, and I’m so glad I made it back. I had the fresh crispy pita hummus wrap with veggies hummus, along with grapefruit, apples bananas and roasted sweet and classic potatoes. I also tried their mandarin green tea which was so lovely! Trying to explore various types of green teas more lately for the various benefits it offers, from glowing skin to increased cognitive function. I’ve been loving hummus and pita (a complete protein when paired together) so much lately. When paired with the vegetables, the flavors are so fresh and crisp. clean and nutritious meal. This week’s Dinner is homemade turkey/ chicken meatballs!!! - I love meatball and experimenting with different flavor combinations. This time, I kept it a bit more on the classic side, but with a slight twist. - These are GF, DF, and kid approved! They can also be made ahead of time and kept in the freezer for a later use. Because I always make enough meat to last us the majority of the week, feel free to cut the recon half to meet your family needs if you’re not one for left overs. - ▪️2 pounds extra lean ground turkey breast. ▪️2 pounds ground chicken breast. ▪️2 eggs. ▪️1 large onion. ▪️8 cloves garlic. ▪️1 cup GF quick oats. ▪️1 tablespoon kosher salt. ▪️1 teaspoon black pepper. ▪️1/2 teaspoon white pepper. ▪️1 teaspoon turmeric. ▪️1 teaspoon ground cumin. ▪️ 1 teaspoon Mrs. Dash garlic and herb seasoning. - In a large bowl mix meat, oats, and spices. In a food processor; pulse eggs, onion, and garlic until finely chopped. Mix wet mixture into meat mixture. Chill for a few hours. Line sheet trays with foil and spray with non-stick cooking spray. Roll meat into 2 oz balls and place on prepped trays. Bake at 375 degrees for about 25-30, or until an internal thermometer reads 165 degrees. Serve with rice, potatoes, or desired side. - I made fried cauliflower rice and mixed in some regular rice to eat with the meatballs tonight and was super yummy 😋!!! - Each meatball is 14.15 g. Protein, 3.9 g. Carbs, 1.43 g. Fat. - I hope you enjoy this easy recipe! Feel free to switch out the type of ground meat. PB CHOCOLATE CHUNK COOKIES⭐️ So easy, so delicious, and SO CHUNKY🥰 Ingredients: 1/3 cup flour 1/2 tsp baking powder 1/2 tsp vanilla 1/2 cup *chunky* PB 1 egg 3 tbsp maple syrup Dark chocolate chunks *Preheat oven to 350F. Mix all ingredients (besides chocolate) together and roll into balls. Next, coat the balls with chocolate chunks. Bake for 7 minutes. Place in fridge until chocolate has hardened.
