*Vulnerable post alert* If you’re struggling, you’re not alone. . Some days, like today, are still hard. I couldn’t eat much today. I felt hungry but had no appetite. Everything I thought of eating sounded gross🤢. Everything felt forced. I know hormones are partially to blame as I often have a day of feeling ill or nauseous before my cycle. But it still bummed me out. . I’m not trying to restrict or fast. I genuinely want to eat because I’m working on building strength and endurance so I’m annoyed I missed out on supporting the gainz today. 😑 I didn’t become vegetarian in order to intentionally get skinny or to have an excuse to eat less. Honestly dropping meat helped me tremendously with recovery primarily due to leveling out my hormones... which I didn’t even realize how far out of whack they were until I finally was OFF the hormonal rollercoaster.🎢😰 . I don’t count calories or macros or weigh my food. I don’t meal plan or journal what I eat. I share my awesome meals on my story but leave out the ones that are a sad 7-11 PB&J I could barely finish. I’d be lying if I said seeing the level of obsession in the fitness world doesn’t freak me out. Is there a “healthy” way to do these things? Maybe. Orthorexia can be a slippery slope, and these things just do not work for me. Maybe they work for you. Maybe you can relate.... or maybe you think I’m full of 💩. Either way, eating disorders are very sneaky and they love disguises.🦹🏼‍♀️ . Although I have mostly recovered from disordered habits and I can talk openly about it...ED still sometimes can inject its poisonous thoughts into my head, congratulating me for making it through a day with hardly any food. What?? Who said that? I don’t want that. You’ve been exposed. Gtfo. See you never. 🙅🏽‍♀️ . The good news is that days like today are few and far between. All I can do is have compassion for myself and plan on a better day tomorrow. I am aaallll about easy dinners. It’s really easy to find gluten-free, sheet pan dinners and this recipe by @paleorunningmomma might just be my favorite. I love that I can feed me, my four kids, husband, AND still have leftovers. You can also leave out the glaze if you’re pressed for time!⁣⁣ ⁣⁣ Ingredients:⁣⁣ chicken & veggies:⁣⁣ 🥄 4 bone-in skin on chicken thighs⁣⁣ 🍴 Salt and pepper⁣⁣ 🥄 3 1/2 cups butternut squash cubed (about 3/4”)⁣⁣ 🍴 2 Tbsp coconut oil melted, divided*⁣⁣ 🥄 Sprinkle of sea salt⁣⁣ 🍴 1 large honeycrisp apple cut into 3/4” cubes⁣⁣ ⁣⁣ Instructions:⁣⁣ ⏺ Preheat your oven to 450 degrees, coat a large baking sheet with 1 Tbsp of the oil. ⏺ In a large bowl, toss butternut with remaining coconut oil and sprinkle with salt, toss again to evenly coat.⁣⁣ ⏺ Once your oven reaches 400 degrees, put your empty sheet pan in the oven. When oven reaches 450, carefully remove sheet pan (it’s hot!) and place chicken thighs on it, skin side up, and sprinkle all over with sea salt and pepper. Arrange butternut squash all around chicken in a single layer.⁣⁣ ⏺ Roast in the preheated oven for 20 minutes, meanwhile, make the glaze. In a high-speed blender or food processor, place all sauce ingredients and blend until very smooth.⁣⁣ ⏺ After first 20 mins, remove sheet pan and brush about 1/3 cup glaze all over the chicken, using tongs to turn if necessary. Brush some of the oil/rendered fat on top, and lightly stir the butternut.⁣⁣ ⏺ Return to oven for another 10-15 mins, remove, brush remaining glaze over chicken along with pan juices and add the apples to the pan, placing in a single layer.⁣⁣ ⏺ Roast for another 10-15 mins or until butternut is caramelized, apples are fork tender and chicken is cooked to an internal temp of 165 F. LEMON OLIVE OIL DIP🍋⁠ ⁠ Makes ¾ cup⁠ ⁠ Ingredients⁠ 2 medium lemons⁠ ¾ cup Extra Virgin Olive Oil⁠ 1 ½ Tbs. minced garlic⁠ 2 sprigs fresh rosemary⁠ ½ teaspoon crushed red pepper flakes⁠ 3 Tbs. finely chopped fresh flat-leaf parsley Sea salt, to taste⁠ ⁠ Preparation⁠ ⁠ This easy dip can be served with warm, crusty bread, or assorted⁠ cut-up vegetables. For a richer dip, serve drizzled over fresh⁠ ricotta.⁠ -With a vegetable peeler, remove the zest from the lemons in strips. Be careful to remove only the zest and none of the bitter white pith. If any is visible, scrape to remove.⁠ -In a small saucepan, heat the oil, lemon zest, garlic, rosemary, and red pepper flakes over low heat until the oil just begins to bubble. Cook, maintaining a light, gentle simmer, never allowing to boil, for 3 to 5 minutes, until the garlic becomes translucent. The garlic should not brown, or it will be bitter. Transfer the mixture to a small heatproof bowl and let cool to room temperature. Remove the zest and rosemary sprigs with a fork or tongs. Stir in the parsley. Add salt to taste.⁠ ⁠ MAKE AHEAD TIPS⁠ Omitting the parsley, you can make this dipping oil and refrigerate it in a covered jar for up to a day in advance.
