Gingerbread Snowball Cookies - (S) If you love gingerbread or spice cookies, then this cookie recipe is the one for you! Some might find these reminiscent of the "Russian Cookies" or the "Mexican Wedding Cakes" that they grew up enjoying every year at Christmas. Dunk these little balls of goodness into a steaming mug of Hot Chocolate Trimmaccino for an extra bit of holiday cheer! Serves: Makes 2-3 dozen Ingredients: *2 cups THM Baking Blend *3/4 cup THM Gentle Sweet (plus approximately 1/4th a cup more for snowball rolling) *3 eggs *6 Tbsp butter (6-8 Tbsps of butter; melted, or coconut oil) *1 tsp blackstrap molasses (for flavoring) *1 tsp aluminum-free baking powder *1 tsp baking soda *3 tsp ginger (3-4 teaspoons; ground ginger) *1 Tbsp cinnamon (ground) *1 tsp allspice (ground) *1/4 tsp mineral salt Instructions: *Place all ingredients into a food processor and process until it begins to form a dough. (The dough should be soft and workable with your hands.) *Spoon out a full teaspoon of dough into your hands and roll the dough into a ball. Depending on how full your teaspoon is you’ll get approximately 24-36 cookie balls. *Place on a parchment-lined cookie sheet and bake for 15-20 minutes in a 350-degree oven depending on how soft or hard you’d like your cookie to be. *When removing your cookie from the oven, roll immediately into a bowl that has approximately 1/4 cup of the THM Gentle Sweet. *Place onto a cooling tray to cool... Serving Size: Makes 6 Muffins Ingredients: Muffin Batter… -1 cup almond flour – 1/2 teaspoon ground cinnamon – 1 teaspoon baking powder – 2 to 2 & 1/2 Tablespoons THM Super Sweet Blend – Pinch of salt – 1 & 1/2 Tablespoons coconut flour – 2 eggs – 1/4 cup unsweetened almond milk – 1/4 cup melted butter – 1/2 teaspoon vanilla – 1/2 cup of diced apples Cream Cheese Filling… – 4 ounces softened cream cheese – 1/4 teaspoon vanilla – 1 teaspoon heavy cream – 1/4 teaspoon cinnamon – 1 to 2 Tablespoons THM Gentle Sweet Topping… – Cinnamon – 1/4 cup THM Gentle Sweet (OR) 1 to 1 & 1/2 Tablespoons THM Super Sweet Blend – 1/4 teaspoon black strap molasses (for flavoring) Instructions: *Preheat oven to 350° F. Grease 6 muffin cups. *For the muffin batter, mix all the dry ingredients first and then add the wet ones in. Mix well. Fold in the diced apples. *For the filling, beat all ingredients until well blended. 4. For the topping, mix together well the black strap molasses and either the Gentle Sweet or Super Sweet Blend. Set aside *Put 2 Tablespoons of the muffin batter in each muffin cup. Set the remaining batter to the side. *Spoon in approximately 1 Tablespoon of the cream cheese filling into each muffin cup and then top the filling with a spoonful of the remaining batter. This recipe is by Gabriella C., the 2019 Trim Healthy You Curriculum Holiday Recipe Contest winner for the Intermediate category. Perfect for Holiday leftovers! Don’t let your turkey or ham leftovers go to waste. Turn them into this delightful creation by brilliant and creative Gabriella! This is a very rich-tasting recipe, what we would call a Heavy S on the THM plan. But Heavy S recipes are just the thing for Holiday celebrations or for any time when we all need to feel blessed, comforted, and indulged. To lighten the meal a little, serve alongside a green leafy salad! This recipe was "featured" first in the Trim Healthy Living EZine~ Edition 20! Serves: 6-8 Ingredients: *8 oz cream cheese (softened) *1/2 cup mayonnaise *1/2 cup sour cream *2.5 cups turkey (cooked & diced; turkey OR ham with a 1/2 cup set aside for topping) *12 oz frozen cauliflower rice (See the Recipe Notes) *8 oz cheddar cheese (shredded; divided in half) *1/4 tsp mineral salt *dash black pepper Instructions: *Preheat the oven to 350° F. *Steam the frozen bag of cauliflower rice for 5-minutes. Place the steamed “rice” into a colander and drain well by pressing down on the “rice” with the back of a serving spoon. Set aside. *While steaming the cauliflower rice, mix well the softened cream cheese, mayo, sour cream, salt, and pepper. *Add 2 cups of the ham (or turkey), steamed/drained cauliflower rice, and 1/2 of the shredded cheddar cheese. Mix well. *Place into a greased pan or casserole dish. *Top with the remaining ingredients (can substitute bacon for the ham or turkey in the topping). *Bake at 350° F for 30-40 minutes. Recipe Notes: Fresh or frozen (without being steamed) cauliflower can be used, but results will vary. For best results, use the method as stated in the instructions. This scrumptious dish is easy to prep-ahead the night before to pop in the oven the next morning while tending to other Holiday festivities! Rich Chocolate Fudge - (S) If you love reeeeeeeal rich desserts, you'll get your fix with this fudge! Super sweet! This recipe is found on page 386 of the original Trim Healthy Mama book. Serves: multiple Ingredients: *4 oz unsalted butter (1 stick) *1/2 cup natural peanut butter (sugar-free) *2 oz 1/3 less fat cream cheese *4 Tbsp unsweetened cocoa powder *1/3 cup THM Gentle Sweet (real sweet tooths may need more or 6 to 8 teaspoons THM Super Sweet Blend) * nuts (optional; nuts of your choice, chopped, any desired amount) Instructions: *Melt the butter and peanut butter in a saucepan. *Take saucepan off heat and stir in the cream cheese. Pumpkin Spice Pancakes - (FP) "Pumpkin Spice" season is upon us and here is a recipe to have that amazing "pumpkin spice" treat in some Trim & Healthy Pancakes for a special Holiday breakfast, brunch or anytime!! This single-serve recipe will make 3-4 nice size pancakes for your breakfast. Serves: 1 Ingredients: 1/3 cup THM Baking Blend 1/3 cup egg whites 1/3 cup 1% cottage cheese 1 Tbsp pumpkin puree (1- 1.5 Tbsp) 1/2 tsp THM Super Sweet Blend 1/2 tsp vanilla extract 1 tsp unsweetened almond milk 1/4 tsp cinnamon 1/8 tsp pumpkin pie spice (1/8-1/4 teaspoon) 3/4 tsp aluminum-free baking powder coconut oil pan spray Instructions: *Place all ingredients in a blender or Ninja bowl and blend until all ingredients are blended well. Allow the mixture to sit for a few minutes to let it thicken up. *Lightly coat a nonstick griddle or nonstick fry pan with coconut oil spray and heat over low/medium heat. *Ladle desired size pancake amounts onto the griddle and cook until golden brown, about 3 minutes. Well said! 👌 "Women’s clothing sizing is... special. I was fitting tightly into size 14s and comfortably into 16s when I started to change how I ate and followed Trim Healthy Mama in June last year. I’ve been a size 10 at my smallest in high school and a size 12/14 for my adult life. This lovely $5 blazer that I picked up at my local women’s resource center thrift shop? It’s a size 4. It’s snug, but it fits and I love it. I got really excited and squealed in the dressing room. In the same shopping trip I also picked up a size 8 dress and tried it on. It was gorgeous and fit... and then it got stuck as I took it off because my shoulders and upper arms don’t dislocate or magically turn to rubber as I get undressed. You’re welcome for not taking and sharing a photo of those really awkward panic inducing minutes. Sizes are fairly flexible and relative. They are not the end all any more than the scale number is. My jeans are size 10. My blazer a size 4. My sweater is a medium. The tank beneath it is a large. "My trim healthy teen! My 15 year old daughter has struggled with her weight for awhile, and it's really been creeping up over the past few years. She plays soccer in the fall and last year she got really discouraged because even with all of the running she was doing every day, and trying to watch calories (but not the types of food she was eating), she only lost a couple of pounds. When the season ended she felt defeated and started over eating, putting on quite a bit of weight over the winter. My heart's been breaking for her but I felt so helpless. I myself was doing keto, which I didn't think was healthy for her because it's too restrictive. I tried to encourage healthier choices but how can I tell her how she should be eating if no one else in the house is going to eat that way? Obviously it didn't work. The picture on the left was this past spring. After that she started working out on her own and she did lose a little bit of weight, and then it stopped. In the summer I started Trim Healthy Mama and started incorporating the changes I was making for myself into everyone else's meals and snacks too. Not 100% for the kids but wherever I could. No more sodas or sugary drinks in the house. Dinners are always THM for everyone. My daughter now does oatmeal, eggs or a shake for breakfast and soup or a sprouted bread sandwich for lunch. Her snacks are mostly yogurt or fruit. She does sometimes have off plan foods, but she's been sticking to the plan. Not only has she lost all of the weight she's put on in the past several years, she's learning how to eat in a healthy way and she feels good about herself for the first time in a very long time. Mama Fox’ Spicy Light Chili (E) This recipe is by Coach Shannon Fox from Trim Healthy Fox! Shannon says: “Here’s one of my favorite easy E meals. Actually, this is my husband’s hands-down favorite white chili – and believe me, we’ve tried many different versions, but this spicy-loving family prefers the kick in the pants flavor of this one. Hope you enjoy this lighter chili, too!” Serving Size: Family-serve; Approximately 6 INGREDIENTS: *1 onion *2 (15-ounce) cans or 1 quart chicken broth *2 (10-ounce) cans diced Rotel brand tomatoes *2 (15.5-ounce) cans great northern beans *2 (12.5-ounce) cans chicken breast meat *1 & 1/2 teaspoons chili powder *1 teaspoon ground cumin *1/2 teaspoon garlic salt *1/4 teaspoon ground white pepper INSTRUCTIONS: *Chop onion and brown in pan. *Combine all of the canned ingredients into a large soup pot. *Combine all of the dry ingredients in a small bowl, then add to soup pot. *Add browned onions to soup pot. *Simmer 1-hour for best flavor. SERVING SUGGESTIONS: *This is a pretty light E meal, so feel free to enjoy a small fruit on the side or a slice of sprouted toast for dunking. *For hubby and growing kids, top their chili with shredded cheddar cheese and/or sour cream for a nice Crossover (XO) meal. We're cheering for this T1D warrior and his Mama! ------------------------------------ "Sometimes God prepares you for something long before you know why?! I started Trim Healthy Mama 7 years ago this coming January. I lost 35lbs and have maintained it! Fast forward to today... my family and I are a picture of health. I lost 35lbs back in 2013 and I’ve maintained that! I love THM and all it has taught me. Now onto the most recent reason God brought THM into my life... My 9 year old son, Elijah was diagnosed with T1D(diabetes) this summer. It was a shock and a new challenge for us as a family of 8! Because of THM, I already knew how to count carbs and choose healthy ones. A possible 1 week stay in the hospital with him ended up being only 2 days!!! Why? Because we knew what to do. Most of the hospital stays when newly diagnosed are long because of education on diet and insulin shots. But, we were already educated on the diet part from THM!! Even Elijah was. The doctors and nurses were amazed and impressed!! We left the hospital knowing how to feed him healthy carbs. I knew how to make good for you sugar free desserts! He already loved my THM desserts and cooking. He LOVES the THM protein bars and hydrate packs!!! Because of those he needs no insulin to eat or drink those. And that makes him really happy!!! It is amazing how good his blood sugars are on THM. If he has some unhealthy carbs or birthday/holiday treats his blood sugars are a mess. THM stabilizes him!!! Frosted Cinnamon Muffin - (S) This large muffin can be your sweet breakfast or a wonderful afternoon snack with a cup of coffee. It is quick to make and delicious, of course it is also healthy and slimming, but all our THM recipes are! Single Serve Ingredients: For the Muffin: *1 large egg *1 Tbsp water *1 Tbsp extra virgin coconut oil (or butter) *dash vanilla extract *3 Tbsp golden flax meal *1.5 tsp cinnamon *2 tsp THM Super Sweet Blend (or, 4 tsp THM Gentle Sweet) *1 pinch mineral salt (omit if using butter) *1/2 tsp aluminum-free baking powder For the Frosting: *1 Tbsp 1/3 less fat cream cheese *1 Tbsp 0% Greek yogurt (plain) *1/4 tsp vanilla extract (or lemon juice if you prefer lemon frosting) *2 tsp THM Gentle Sweet (or, 1/2 to 3/4 tsp ground Super Sweet Blend) Instructions: Muffin *Crack egg into a coffee mug and whisk well with a fork. *Add all other ingredients *Stir vigorously until very well combined. *Pour into a greased (or spray with coconut oil cooking spray) ramekin. *Microwave for 1 minute or bake for 15 minutes in a 350-degree oven - cook until no longer gooey on top. Frosting *Put cream cheese and yogurt into small bowl. *Add rest of ingredients (if using THM Sweet Blend, be sure to grind it first in a coffee grinder to ensure a smooth frosting). *Stir all ingredients very well with your fork, taste for desired sweetness and add more sweetener, if needed. *Top muffin generously with all of the frosting. RECIPE NOTES: *Ramekin option: Bake at 350 for 10-15 minutes, until no longer gooey on top. *Waffle iron option: Pour mixture onto iron and cook until done. *Muffin tray option: Fill two holes with mixture and remaining holes with water; bake at 350 for 10-15 minutes.
